Deviled eggs have long been a staple at American barbecues, and we love them. But Steven discovered that grilled and smoked eggs are common currency on the world’s barbecue trail. Wood smoke takes “the incredible, edible egg” in amazing gustatory directions. Whether you eat a smoked hard-cooked egg plain with a bit of coarse salt, turn it into a luscious egg salad, use it in potato salad, or dice it and serve with Smoked Salmon, you’ll never look back. (Pro Tip: For an egg that resembles a Chinese tea-dyed egg, roll a hard-cooked egg gently under your palm to produce multiple cracks. Then place it on the smoker. Peel before using, of course.)

3. Cocktails

Barbecue you can drink? Yes, wood smoke can turn a cocktail you’ve sipped a hundred times into a beverage that will fill you with wonder. Everything from a Bloody Mary to a Manhattan can be transformed. A hand-held smoker is useful for infusing spirits with the flavor of wood smoke, but Bacon Bourbon doesn’t require a smoker at all. The smoky flavor comes from the bacon. This infusion makes a great holiday gift, especially if you use the recipient’s favorite bourbon.

4. Smoked Cheesecake or Flan

Wood smoke has been called the umami of barbecue, and it is wondrous when applied to desserts like cheesecake and flan. The former (served with caramel sauce) wowed the crew of Project Smoke while filming in Tucsan, Arizona. It’s astonishingly good. The latter will make your guests swoon.
