Grilled Garlic-Honey Pork Chops – Derrick Riches

These grilled garlic-honey pork chops are fantastic! They are tender, juicy, and delicious. For this recipe, we used marinated boneless pork loin chops. Once grilled, we drizzled on a sweet and savory sauce just before serving.

There is nothing that says comfort food more than a perfectly grilled pork chop. While we are fans of bone-in rib chops, we used boneless loin for this grilled garlic-honey pork chops recipe.

What is a boneless pork loin chop?

Pork loin chops are taken from a deboned pork loin roast. Typically, they are cut into 1″-1 1/2″ thick medallions and sold as pork chops. These chops are versatile, but due to their lower fat content, they are prone to drying out. We recommend marinating or brining them before cooking to help the meat retain its moisture and also to promote tenderness.

Ingredients

  • 4 boneless pork loin chops, about 1 ½” thick
  • Honey (or Hot Honey for added spiciness)
  • Lemon juice
  • Soy sauce (sub with GF Tamari, low-sodium soy sauce, or coconut aminos)
  • Garlic
  • Sherry or cooking sherry
  • Salt and black pepper to taste
  • Green onions (or fresh herb of choice like chopped parsley, chives, thyme, etc.)

Please note that loin meat can dry out quickly, so it’s best to have a reliable instant-read thermometer on hand so you can pull the chops off of the grill at the right temperature. 

Marinating Pork Chops

  • To make the pork chop marinade, warm the honey in the microwave for 10-15 seconds.
  • Whisk warmed honey with fresh lemon juice, soy sauce, garlic, and sherry. Stir well and set aside.
  • Place pork chops into a resealable plastic bag.
  • DIVIDE the marinade mixture in half
  • Pour one half of the marinade over the pork chops and gently toss with tongs to coat. 
  • Seal the bag and place it in the refrigerator for 4-8 hours.
  • Reserve the other half of the pork chop marinade in the fridge for later.

Grilling and Serving

  • Prepare your gas or charcoal grill for 350 degrees F or medium heat.
  • Heat reserved half of the garlic-honey mixture in a small saucepan. Bring to a simmer. Add a little water if the mixture is too thick. Reduce heat to low and cook for 3-4 minutes, stirring often. The sauce should coat the back of a spoon. Cover and keep warm.
  • Remove the chops from the marinade and place them on a cutting board.
  • Season with salt and black pepper. 
  • Place pork chops on the grill and cook for 13-16 minutes or until chops reach the desired doneness.
  • Aim for an internal temperature between 145 and 150 degrees F. or medium doneness.
  • Once cooked, remove the chops from the grill and place them onto a clean serving platter. 
  • Drizzle with warmed honey garlic sauce, and garnish with chopped green onion or a fresh herb of choice.
  • Store leftover pork chops in an airtight container in the fridge for 3 days. Rewarm in the microwave or your oven at 350 degrees.

Try this recipe with bone-in pork chops and chicken breasts too. Simply adjust the cooking times. Serve with rice or potatoes, and green beans for a delicious weeknight meal!
