This gooey and cheesy sandwich has stood the test of time. Who would’ve thought two slices of bread with melted cheese would be so good? But I am taking it to the next level by cooking it on the grill.  It gives that extra flavor smoky flavor.

You still get that crispy and buttery outside with oozy, gooey cheese on the inside, but there is no pan to clean up, and you can make a few sandwiches at a time, perfect for when you have guests over.

How to Make BBQ Grilled Cheese

Step 1: Butter the bread

Using a butter knife, spread butter on one side of each slice of bread.

Step 2: Assemble the sandwiches

Put a piece of cheese on the unbuttered side of the bread and top with shredded cheese. Top with another slice of bread, butter side up.

Step 3: Grill the sandwiches

Preheat the grill to 275°F. Grill the sandwiches for 3-4 minutes until the cheese is melted. Flip over and grill for about 2-3 minutes. Both slices of bread should have golden brown butter.

What Bread to Use

Sourdough is my favorite, but you can use whichever type of bread you like! Wheat and white are popular options. Rye or pumpernickel are less popular but would be unique and delicious.

Cheese Options

Cheddar, American, and Swiss cheese are the most popular types of grilled cheese. However, you can use anything!

I love using pepper jack cheese because it adds a kick of heat. For something a bit unique, you could try gouda or mozzarella.

What Else Can I Put On It?

A grilled cheese is perfect in its basic form. However, there are countless ways to amp it up!

  • Add protein:
    • Deli meat
    • Leftover smoked meat
    • Barbecue chicken
  • Experiment with flavor combinations:
    • Pair different meats with cheeses (e.g., roast beef and cheddar)
  • Incorporate sauces and spreads:
    • BBQ sauce
    • Pizza sauce
    • Salad dressing
    • Homemade seasoned butter
  • Add vegetables and fruits:
    • Caramelized onions
    • Spinach
    • Tomato slices

What Temperature to Grill At

Smoke a grilled cheese sandwich at 275°F. This low to medium heat will allow the cheese to melt and the bread slices to crisp for about 3 minutes on each side.

Once the butter on top melts, you’ll know it’s about time to flip it. Once the cheese is melted, the sandwich is ready! The temperature is wrong if the bread is too soggy or burnt.

If the bread is too hot, it will burn before the cheese melts, and if it’s not warm enough, it will get soggy before it cooks.

  • 6 slices bread
  • 3 slices cheddar cheese
  • 1/2 cup shredded cheese
  • Preheat the grill to 275°F.
