The Clover Club Cocktail

The Clover Club cocktail is a classic drink that can be traced back to Philadelphia’s Bellevue-Stratford Hotel in the late 1800s. This bright, fruity pre-Prohibition classic is a sour cocktail that has once again become a popular drink choice for many.

Its resurgence in popularity was solidified in 2008 when Julie Reiner opened a cocktail bar in Brooklyn, New York named after the classic drink. And now the Clover Club cocktail is found on menus across the globe.

This pink cocktail is a striking one in both appearance and flavor. The raspberry syrup gives the drink a beautiful bright pink hue which is topped with a creamy egg white foam.

And the bold, bright taste of lemon, raspberry, and gin pack each sip with lots of sweet-tart flavor. While the egg white gives each delicious sip a silky smooth mouth feel – much like a classic gin sour cocktail.

Ingredients Needed for a Clover Club

You will need only a few simple ingredients to mix up a Clover Club cocktail. The drink was originally made with grenadine (pomegranate syrup) but today is more commonly made with raspberry syrup – which is easy to make and only takes a few minutes (see recipe below).

  • Gin. You can use any high-quality gin to make a good Clover Club, but a London dry gin is our recommendation. It will best complement the cocktail’s tart fruit and silky body.
  • Raspberry syrup. Raspberry syrup is like a classic simple syrup but with the inclusion of raspberries. So it is used to sweeten the cocktail while adding lots of fresh raspberry flavor. You can use a store-bought version or make your own at home!
  • Lemon juice. Freshly squeezed lemon juice is always best when it comes to making cocktails.
  • Egg white. To give this cocktail its iconic silky finish, egg white is added to the cocktail shaker to create a beautiful frothy finish. You can substitute the egg white for aquafaba (chickpea water) for a vegan alternative.

More about Raspberry Syrup

You can buy raspberry syrup at some liquor stores or online to make your Clover Club. But it’s also quick and easy to make some at home! The ratio for raspberry syrup is 1 part raspberries, 1 part water, and 2 parts sugar. So you can make as much or as little as you like.

These are the steps to make about one cup of homemade raspberry syrup:

  • Place 1 cup sugar and ½ cup water in a saucepan over medium-low heat. Cook for about 1 minute until the sugar dissolves.
  • Add ½ cup raspberries and cook until the berries start to break down – about 5 minutes.
  • Break down the berries further with a spatula if needed. And then once completely liquid, strain the syrup into a sealable jar using a fine mesh sieve.
  • Allow to cool and then seal and store in the fridge for up to 3 weeks.

Cheat’s Version

To save a few minutes of cooking time, you can take a shortcut to make a cheat version of raspberry syrup.

Simply muddle four fresh raspberries with a half-ounce of simple syrup in your cocktail shaker before making the rest of the cocktail. This essentially creates a quick syrup, with very similar flavor results for your Clover Club.

How to make a Clover Club

The best and traditional way to make a Clover Club is by using The Dry Shake technique which requires you to shake your cocktail twice.

The first shake is without ice cubes and the second shake is with ice. This is the best way to create a thick and lasting egg-white foam.

STEP ONE

Place all ingredients in a cocktail shaker. Shake for 20 seconds without ice.

STEP TWO

Add ice to the cocktail shaker and shake again for 30 seconds.

STEP THREE

Strain into a serving glass and garnish as desired. Enjoy immediately.

Clover Club Recipe Tips and Notes

It’s all about the strain – Make sure to strain your cocktail well using a fine-mesh strainer or a Hawthorne strainer. This will ensure that your cocktail is the best texture and will make sure there are no unwanted bits.

Use fresh ingredients – Always use fresh ingredients, such as lemon juice, to get the best flavor. Avoid using bottled juice, which can have a flat taste and may contain preservatives.

Chill your serving glass – To make the cocktail extra frosty, place your cocktail glasses in the freezer 30 minutes before making your Clover Club. This ensures that your cocktail stays super cold and doesn’t quickly come to room temperature.

Handle the eggs carefully – Always crack and separate the egg in a small bowl before adding it to your cocktail shaker. This will help to prevent you from accidentally adding any of the yolk (fat inhibits egg white foaming) or a piece of eggshell.
