These Cinnamon Apple Butter Puff Pastry Tarts are the perfect handheld treat to enjoy this Fall! Made with extra flaky puff pastry (either homemade or store-bought!), spiced apple butter, and fresh apples, they are the perfect quick and easy fall snack.

Have you ever made our peach tarts before? If not, let me tell you…they’re one of our most popular recipes and these apple tarts are the fall version of our summertime classic! Plus, they are much easier than making a full apple pie, but with all the same apple-y cinnamon goodness that you know and love.

These make a great dessert, an indulgent breakfast, or a sweet snack. You can even prep them ahead and bake them fresh in the morning!

Start With The Puff Pastry

Whether you opt to use homemade or store-bought, getting the pastry prepped is essential! If using store-bought puff pastry dough, be sure to thaw it before using. However, if you have the time, I recommend trying from-scratch puff pastry dough. Our recipe makes uses the simpler method to make it (also known as rough puff!).

So, if you happen to have a few hours (that can be broken up over a couple days, if needed!), try making your own homemade dough. It’s so flaky, buttery, and SO worth it!

We use it so often that many of our recipes call for it — like tomato goat cheese tart, asparagus pastry bundles, cranberry cream cheese puff pastry tarts, savory mushroom turnovers, or even this festive cinnamon ganache tear and share.

Remember, if you’re making your own, make the pastry dough ahead of time, because it needs to chill before it’s used (this is what creates those deliciously flakey layers!). For the best results, we recommend making the rough puff the day before.

Our 8 Ingredient Apple Filling

The filing is a super simple, no cook treat that is just as easy as it is to make as it is to eat! 😉

  1. Granny smith apples: To keep the tarts from being too sweet, we opted to use tart granny smiths! You can use any of your favorite baking apples for this recipe.
  2. Cornstarch: This is the thickener that keeps the juice from the apples being too runny, which would make the tarts soggy.
  3. Cinnamon: Our favorite spice to pair with apples!
  4. Vanilla: Pure vanilla extract gives the best flavor.
  5. Brown sugar: Adds a depth of flavor to every bite.
  6. Lemon juice: Cuts the sweetness, adds some much needed acidity, and keeps the apples from browning too much.
  7. Salt: Enhances the flavor.
  8. Apple butter: This keeps the tart from being too dry, as well as add some extra apple flavor! You can use either homemade or store-bought apple butter for this recipe.

We’re going to mix everything together (except the butter!) to create our filling. There’s no need to cook the apples. They’ll cook when we bake the tarts! Simply set the mixture aside while we prep the pastry.

Spoon the apple butter into the center of each pastry. Layer the apples slices on top of apple butter, fitting as many slices of apple as you can! Then, bake for 23 minutes, or until pastry is golden brown.

Enjoy as-is, with a drizzle of caramel sauce, a scoop of ice cream, or combine the two and enjoy these tarts with a scoop of caramel apple ice cream for the perfect fall dessert!

Cinnamon Apple Butter Puff Pastry Tarts

Warm up with these easy and delicious Cinnamon Apple Butter Puff Pastry Tarts! Made with flaky puff pastry and a sweet apple filling, they’re the perfect fall treat to enjoy all season long.

Cook Time: 23 minutes
Total Time: 58 minutes

Tarts

  • Thaw puff pastry according to package directions.

  • While pastry is thawing, heat oven to 400℉/204℃.

  • Line 2 sheet pans with parchment paper. Set aside.

  • Make egg wash by whisking egg and water together in a small bowl. Set aside.

  • Core and slice apples.

  • In a large bowl, combine apples, lemon juice, brown sugar, cinnamon, cornstarch, salt, and vanilla.

  • Stir until apples are completely coated. Set aside.

  • Unfold one sheet of puff pastry and smooth creases.

  • Cut into 6 equal rectangles.

  • Repeat with second sheet.

  • Place rectangles on prepared sheet pans.

  • Using a small pastry brush, brush edges with egg wash.

  • Fold edges in so that you have about ½-inch frame.

  • Press lightly to seal.

  • Brush tops of frame with egg wash.

  • Spoon 1½ teaspoons apple butter in the center of each pastry and spread evenly.

  • Layer apple slices on top of apple butter.

  • Bake for 23 minutes, or until pastry is golden brown.
