You will love this Traeger egg salad sandwich. It is the perfect way to use the leftover smoked eggs you have or maybe you should throw a few in the smoker next time your cooking something.

We all know that one of the best parts about cooking is the leftovers, I had lots of my smoked teriyaki chicken and smoked tuna leftover after the last cookout, so we have delicious sandwiches, tacos and salads all week long.

While I was smoking the teriyaki chicken I also threw in some eggs.

I knew my smoked egg salad sandwiches would be a massive hit with the kids and my wife, but now they are requesting it weekly so i need to smoke some more eggs!

  • Dijon Mustard
  • Grainy Mustard

How to Make Traeger Egg Salad Sandwich

Step 1: Heat the Grill and  Smoke the Eggs

Place the eggs directly on the grill grates. Smoke at 225˚F for an hour or on the indirect zone of a smoky grill. Then drop them in cold water with some ice to cool down.

The eggs should have a slight brown color. Remove the eggs from the smoker and let them cool.

Note: you can skip this step if you already smoked your eggs and just want to make the sandwich

Step 2: Prepare the Egg Salad

In a bowl combine mayo, mustard, diced pickles, and the smoked eggs. Use a potato masher to mash everything until combined.

Step 3: Build the Sandwiches

Add a scoop of egg salad, on a slice of bread. Top with another slice of bread and garnish with fresh parsley

Serve and enjoy!

Variations for Egg Salad Sandwich

You can add nearly anything to this recipe.

  • Maybe you want some extra spice. Try adding chili powder or cayenne pepper.
  • You can even put your favorite hot sauce on the sandwich.
  • What if you want to sneak in some extra veggies? Diced bell peppers will also add a little bit of crunch to this sandwich.
  • Flavorful poblano peppers are another tasty option.
  • Any fresh herbs and spices can increase the delicious flavor of this recipe! Some people love to add fresh dill.
  • If you take the egg yolks out of your eggs, you will want to cook extra eggs. This will allow you to have enough eggs for your sandwiches.

What Temperature to Smoke Egg Salad Sandwich At

Smoke the eggs at 165˚F.Since we’re only adding a little bit of flavor to the eggs, we don’t need a high temperature.

The low temperature will add some smoky flavor without overcooking the eggs.

Raw eggs need to reach an internal temperature of 160˚F to be safe to eat. If the eggs are fully cooked, then they are ready to cool down to make this recipe. However, egg salad is best served cold. So let the eggs cool completely before eating it. Some people prefer to refrigerate the egg salad for a few hours before serving it.

How to Store Leftovers?

Store the egg salad in an airtight container in the refrigerator for a few days. You can put it in a freezerproof container in the freezer for a month or two.

For best results, store the egg salad separately from the bread. If you assemble the sandwiches, the bread may become soggy in the fridge.
